Some people view April 1st as April Fools Day, but I like to think of it as the kickoff of National Grilled Cheese Month! To help you celebrate, I am sharing my favorite grilled cheese recipes so that you can spend the month indulging because let’s face it, cheese and carbs are the best food groups.
Spaghetti Grilled Cheese – I love this recipe because it is a fun way to repurpose leftovers. Spaghetti in tomato sauce is sandwiched two pieces of garlic bread and held in place with melted mozzarella. It’s shockingly good.
Raspberry Brie Grilled Cheese – This is a lighter grilled cheese made with fresh raspberries and brie sandwiched between slices of soft butter brioche.
Crispy Prosciutto Grilled Cheese – Crispy prosciutto is thinner, crispier, and more delicious than bacon. Pair it with Cowgirl Creamery’s Mt Tam Triple Cream Cheese and whole grain mustard and you really have something.
Strawberry Nutella Cheesecake French Toast Grilled Cheese – This is absolutely decadent. Two slices of brioche french toast are stuffed with a mascarpone cheesecake filling, nutella, and fresh strawberries.
Cheddar, Bacon, Avocado Grilled Cheese with a Cheesy Crust – Cheddar cheese, avocado, and bacon is a winning flavor combination. Adding cheese on the outside of the bread gives the sandwich an extra boost of cheesy flavor.
Enchiladas Suizas Grilled Cheese – This Mexican twist on grilled cheese is made with rotisserie chicken, Chihuahua cheese, and a tomatillo sauce.
Roasted Tomato and Cheddar Grilled Cheese – Grilled cheese and tomatoes are a classic pairing, and this recipe utilizes deeply flavorful roasted tomatoes and adds a cheesy crust to the bread.
Scrambled Egg and Avocado Grilled Cheese – Yes, you can have grilled cheese for breakfast. This sandwich with scrambled eggs, cheddar, avocado, arugula, and tomato is a complete breakfast that will fill you up.
