This Crispy Chicken with a Honey Curry Sauce combines chicken coated with buttery and salty Ritz crackers with a sweet and spicy honey curry sauce. I love it because it takes the classic concept of chicken with a sauce and pairs it with some unexpected ingredients.

It is a recipe that my Mom made frequently when I was in high school. The recipe originally came from her friends’ restaurant, The Hurricane in Kennebunkport. It was one of my favorite dinners, so when my Mom came to visit me when I was studying in Florence, I asked her to make it for me and my friends.

My friends and I had this routine of cooking dinner for each other. Some of us had classes that got out late, and we came up with a schedule where six of us paired off and made dinner for everyone one night, and in return, we had dinner cooked for us two nights. It worked really well. We were all art students with tight budgets, so we rarely went out for meals. Most of my Florence memories are of me and my friends gathered around a long table sharing meals together and drinking wine. Often doing impressions of our somewhat odd Art History professor.

But somehow, after Florence, I forgot about the recipe. Several years later, once I moved to Chicago and reunited with a couple of friends that I had met in Florence, my friend Woody asked me to make that recipe my Mom cooked for us in Florence. It took me a few days to remember what he was talking about, but I was very happy to rediscover this meal.

Crispy Chicken with a Honey Curry Sauce is easy to prepare in just about 45 minutes. I like to serve this meal with rice because I like how the rice soaks up the honey curry sauce.

I know the sauce looks like caramel, and the process of making the sauce is similar to making caramel. The way that the butter and honey bubble together and thicken is similar to how I make caramel. The sauce tastes nothing like caramel though. It’s sweet and spicy with a balance of buttery, honey, ginger, and curry flavors.

Crispy Chicken with a Honey Curry Sauce

This crispy chicken is coated with cracker crumbs topped with a sweet and spicy honey curry sauce. It is a meal with bold flavors that comes together in just 45 minutes.

Ingredients

  • 4 small Chicken Breasts
  • 4 tablespoons Butter
  • 1 tablespoon Olive Oil
  • 1 sleeve of Ritz Crackers (or plain panko)
  • 1 teaspoon Dried Basil
  • 2 Eggs
  • 1/4 – 1/2 teaspoon Curry Powder
  • 1/4 teaspoon Ginger Powder
  • 1/3 cup Honey

Instructions

Preheat the oven to 300 degrees.

This is optional, but I like to pound the chicken breasts until they are thin.

Crush the crackers into a small bowl. Mix in the dried basil. In another small bowl whisk the 2 eggs. Then coat the chicken breasts with the cracker crumb mixture. Then dunk in the eggs, and then back in the cracker crumbs.

Heat 1 tablespoon butter and the olive oil in a large skillet over medium heat. Then brown the chicken. Once the chicken is browned on both sides place it on a baking sheet and put into the oven. The chicken should take about 30 minutes to cook depending on how thick the chicken breasts are.

While the chicken is baking, make the sauce. Melt 3 tablespoons butter in a small saucepan. Stir in the honey. Let the butter and honey mixture bubble and reduce for about 5 minutes. Then add the ginger and curry. These are pretty strong spices so add them slowly being careful not to add too much. I recommend starting with 1/4 teaspoon of each and then adding more to taste.

Serve the chicken with the sauce drizzled over the top.
