The Most Fun and Easiest Dinner

Out of sheer exhaustion, I created the most fun and easiest dinner. It was Friday. Charles and I were low on sleep since Gwen has been going through some serious teething. We didn’t want to buy groceries. We didn’t even want to deal with getting takeout. We wanted some quick, easy, and immediate. So we had a platter of snacks for dinner. And we LOVED it!

These weren’t just any snacks. I went to local markets to buy some gourmet snacks to add to a pretty solid lineup of snacks that we had on hand already. While Charles was doing bedtime with Gwen, I just set the snacks out on a platter and I filled a big bowl with slices or bread, crackers, and veggies for dipping. It took just a few minutes – it was so much faster than waiting for delivery or takeout.

Once Gwen was in bed, we took the meal and bottle of wine up to the roof where we set up our projector and watched Ted Lasso while we ate. It was the perfect Friday night. We might do it again this week.

We had most of this food at home already. I just went to Foxtrot for wine, bread, and the parma dip. It was a great way to clean out the fridge.
