The Most Fun and Easiest Dinner

Sharing is caring!

Out of sheer exhaustion, I created the most fun and easiest dinner. It was Friday. Charles and I were low on sleep since Gwen has been going through some serious teething. We didn’t want to buy groceries. We didn’t even want to deal with getting takeout. We wanted some quick, easy, and immediate. So we had a platter of snacks for dinner. And we LOVED it!

These weren’t just any snacks. I went to local markets to buy some gourmet snacks to add to a pretty solid lineup of snacks that we had on hand already. Luckily we live close to Foxtrot which has a wonderful selection of grab and go dips and snacks. We love their Elote Guacamole and their Parma Dip. If you haven’t tried Foxtrot, you can use this referral link to get $10 off your first order. (This post is not sponsored, I am just a big fan).

While Charles was doing bedtime with Gwen, I just set the snacks out on a platter and I filled a big bowl with slices or bread, crackers, and veggies for dipping. It took just a few minutes – it was so much faster than waiting for delivery or takeout.

Once Gwen was in bed, we took the meal and bottle of wine up to the roof where we set up our projector and watched Ted Lasso while we ate. It was the perfect Friday night. We might do it again this week.

Let’s break down what was on the snack platter:

Foxtrot’s Elote Guacamole
Foxtrot’s Parma Dip
Zingerman’s Pimento Cheese (purchased at Olivia’s Market)
Cheddar Cheese
Cretor’s Cheddar Cheese Popcorn
Slices of Baguette
Cooked Broccoli
Baby Carrots
Tortilla Chips

We had most of this food at home already. I just went to Foxtrot for wine, bread, and the parma dip. It was a great way to clean out the fridge.

The photos here aren’t fancy. They are just quick snaps from the night. I wanted to give you a real life look at our night instead of turning the night into a styled shoot.
