Strawberry Mint Lemonade

Lemonade is the perfect refreshing summertime drink. This pretty pink lemonade is made with blended strawberries, fresh mint, lemons, and simple syrup. I made a big batch over Memorial Day weekend and we sipped on it all weekend.

At first Charles was reluctant to try this because he thought that it might be sugary sweet. But, I toned down the sugar since the strawberries add a good amount of sweetness. Once Charles tried a sip of this drink, he was hooked! He keeps asking me to make this again. (And now I finally can now that we have moved).

As some people pointed out when I originally posted a photo of this lemonade on Instagram, the addition of vodka would turn this into a great cocktail. This makes this strawberry mint lemonade perfect for summer parties and family get togethers. You can serve the lemonade to kids as is, and the adults can add a splash of vodka.

Strawberry Mint Lemonade 2

You will need:
1 ½ cup Lemon Juice (3 Lemons)
½ cup Sugar
2 ½ cups plus ½ cup Water
1 cup Strawberry Puree
5 large Mint leaves

Step 1:
Slice the stems off the strawberries. Then place the strawberries and mint in a blender. Puree the strawberries until the consistency is smooth.

Step 2:
Prepare some simple syrup. Heat ½ cup water until steaming and then add the sugar. Stir until the sugar dissolves.

Step 3:
In a large pitcher, combine the strawberry puree, simple syrup, lemon juice, and water. Stir together. Serve over ice.
