First, you quickly sauté the onion, bell pepper, and poblano pepper in some olive oil and garlic. You want the vegetables to just be slightly soft. Then I let the veggies cool before mixing in the ground turkey, paprika, onion salt, garlic powder, salt, and pepper.

If you wanted to give the burgers a kick of spicy heat you could add some chopped jalapeno pepper and a touch of cayenne or chili powder.

I love adding lots of toppings to a burger. This time I added grilled red onion, a slice of heirloom tomato, avocado, swiss cheese, and a bit of ranch dressing.

The ranch dressing is totally optional, but I recently came up with the best ranch dressing recipe and finding foods to put it on has become a personal mission. Charles added barbecue sauce on top of his burger instead. You can choose your favorite topping.

The recipe below makes 4 turkey burgers, but you could easily double or triple the recipe. You may want to make extra and then individually wrap some and leave them in your freezer for later.

You can cook the Southwest Turkey Burgers outside on a grill or inside using a grill pan. I used a grill pan because I think it is a bit faster and easier.

Ingredients

  • 1 pound Ground Turkey
  • 1/2 cup finely chopped White Onion
  • 1/2 finely chopped Red Bell Pepper
  • 1/3 cup finely chopped Poblano Pepper
  • 2 cloves of finely chopped Garlic
  • Salt and Pepper
  • 1 tablespoon finely chopped Flat Leaf Parsley
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Salt
  • 2 tablespoons Olive Oil
  • 1 Red Onion
  • 1 Heirloom Tomato
  • 1 Avocado
  • Lettuce
  • 4 Brioche Buns
  • Optional Ranch Dressing

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet. Once hot, add the onion and saute for 1 minute. Then add the bell pepper, poblano pepper, and garlic. Season generously with salt and pepper. Saute for 2 minutes, until the veggies have softened slightly. Then remove from the heat, pour into a mixing bowl, and let cool.
  2. Once the sauteed vegetables have cooled, add the turkey, parsley, paprika, garlic powder, and onion salt. Stir to combine.
  3. Divide the turkey mixture into four even sections and form them into flat round patties, just larger than the buns.
  4. Lightly coat a grill pan with olive oil and heat over medium-high heat. Add the burgers and cook for 4-5 minutes per side, until they are browned and the internal temperature reaches at least 165 degrees (this is the cooking temperature for turkey breast). If you like you can slice the onion and grill the slices alongside the burgers.
  5. Serve the burgers on buns and topped with red onion, tomato, avocado, lettuce, and maybe a drizzle of ranch dressing.
