One of my favorite meals from childhood, Cheesy Chicken Broccoli Casserole is made with tender chicken breasts, mushrooms, and broccoli with a creamy sauce topped with ritz cracker crumbs, cheddar cheese, and bacon.
This Butternut Squash Lasagna is made with layers of pureed butternut squash, spinach and ricotta, mozzarella, and butternut squash alfredo sauce. It’s a delicious meal filled with fall flavors.
Some of these casserole recipes are meals that I grew up eating. The Cheesy Chicken and Broccoli casserole was my favorite when I was a kid, and now I make it for myself. I love the creamy cheesy sauce, chunks of broccoli, tender chicken, and crispy cracker crumbs on top.
