Balena's Cacio e Pepe, a love story

Balena Cacio e Pepe

Balena's Cacio e Pepe is perfection. It is one of those meals that is simple yet elegant. The flavors are balanced nicely. It is a classic dish done right. I love Balena's fresh pasta. It has a healthy amount of egg yolk which lend a sturdiness to the pasta. The spaghetti itself is extra thick, and cooked al dente. The cacio e pepe sauce is creamy without being heavy and has just the right amount of pepper. This dish is Italian comfort food at its finest.

To be totally honest, I look a little break from writing The Gourmet Grilled Cheese Cookbook and decided to treat myself to one of my favorite meals. Don't worry I will be back with a fresh recipe tomorrow.
