Braised Chili Short Ribs

Braised Short Rib
Braised Short Rib

To kick off a new year of posts, today I am sharing the short rib recipe that my Mom used for our Christmas Eve Eve dinner. It was the first night that everyone was together for the holiday, so my Mom cooked us a special dinner. A couple of notes: the short rib has a little chili and it adds a tiny kick and lots of flavor. The corn was frozen on the cob over the summer, and then cooked up that night. My Dad is the master of the mashed potato volcano - he made one on everyone's plate. My husband had never had a mashed potato volcano (filled with the short rib sauce) before, but his life has been changed. He made a mashed potato volcano last night.

This recipe can either be made in a slow cooker, or in a dutch oven baked at 300 degrees.

Here is a link to the recipe. I just realized that the plate above probably has 1,000 calories on it! (Though so worth it). I am glad I signed up for an hour and a half workout tonight.

More beef

  • Bacon Cheeseburger Tacos are made with cheeseburger wrapped in flour tortillas and topped with tomato, avocado, bacon, lettuce, pickles, grilled red onion, and a sriracha animal sauce. They are just as crazy delicious as you might imagine.
