Bacon Cheeseburger Tacos are made with cheeseburger wrapped in flour tortillas and topped with tomato, avocado, bacon, lettuce, pickles, grilled red onion, and a sriracha animal sauce. They are just as crazy delicious as you might imagine.
My recipe for Bacon Cheeseburger Tacos get its inspiration from Velvet Taco, a local taco joint known for it’s creative tacos. Charles has a tendency to travel on Thursdays, and I have a tendency to order a trio of tacos from Velvet Taco and indulge in watching TGIT.
I am indecisive when it comes to deciding which tacos to order, which leads me to ordering more tacos than I can eat. I always have a taco leftover, and I call this taco my “tomorrow taco”. It’s the taco that I am saving for the next day. Once when Charles returned from wherever he had traveled to, he came home and discovered my bacon cheeseburger tomorrow taco. He excitedly told me that it was one of the best tacos he had ever tasted. I told him that I was sad he ate my tomorrow taco. Then he laughed at my invention of the tomorrow taco.
The point of the story is that bacon cheeseburger tacos are an amazing food mashup. And that when you are married all of the food in the fridge is fair game.
Recently when Charles requested cheeseburgers for dinner, I decided to make bacon cheeseburger tacos instead. It is all the deliciousness of a cheeseburger, but without that pesky bun it is easier to eat. You know how it is hard to fit a burger with lots of toppings in your mouth? Then you replace the bun with a tortilla you can add all the toppings you want.
My bacon cheeseburger taco recipe brings together thin ground sirloin patties with American cheese, crispy bacon, juicy tomato, fresh lettuce, grilled red onion, slices of avocado, dill pickle, and a sriracha animal sauce in a flour tortilla. The homemade version is just as delicious as Velvet Taco’s, and it turns out that you can easily make bacon cheeseburger tacos in less time than it takes for them to be delivered to your door.
I have grown to appreciate burger sauces. After years of thinking that they were an unnecessary addition to a perfectly good cheeseburger, I have come to the realization that a burger sauce can pull a burger together and make it taste even better.
The sriracha animal sauce takes just minutes to mix up, and you probably have all of the ingredients in your fridge. If you want to skip it, you can. Or, you can try using thousand island or ranch instead.
How to make Bacon Cheeseburger Tacos:
Bacon Cheeseburger Tacos
Ingredients
- 4-5 slices of Bacon
- 1 lb Ground Beef
- 4-5 slices of American Cheese
- 1 Avocado
- 1 Large Tomato
- 8 leaves of Lettuce
- 1 Red Onion
- 8-10 slices of Dill Pickle
- 4-5 Flour Tortillas
For the Sriracha Animal Sauce:
- ¼ cup Mayonnaise
- ¼ cup Ketchup
- 1 tablespoon Chopped Dill Pickle
- 1 tablespoon Sriracha
- ½ teaspoon Mustard
- ½ teaspoon Apple Cider Vinegar
- ½ teaspoon Sugar
- ¼ teaspoon Salt
- ¼ teaspoon Black Pepper
Instructions
- Start by cooking the bacon. Place it on a parchment lined baking sheet and bake the bacon in the oven at 400 degrees for 10-12 minutes, until it reaches the level of crispness you desire.
- While the bacon is cooking, prepare the sriracha animal sauce. You just need to stir all the ingredients together. Then set aside.
- Next, slice the tomato, onion, and avocado. When slicing the tomatoes, slice them into large half round slices.
- Form 4-5 patties using the ground beef. The patties should be thin and about the size of your palm. Since burgers get fat in the middle as they cook I like to make the center of the burger a little thinner so when it fattens up when it cooks the burger are a consistent thickness. Note: I made 5 patties with 1 pound of ground beef. If you want slightly bigger burgers, make 4 quarter pounders.
- Once the bacon is ready it is go time! Heat a skillet or grill pan over high heat. Add just enough butter to coat the bottom of the pan. Sprinkle the burger patties with salt and pepper, and add them to the pan. Then add the slices of red onion and cook them alongside the burgers.
- Let the burgers cook for 2 minutes and then flip them. Flip the red onion too. Top the burgers with the cheese and cook for another 2 minutes. The burgers should the thin and they will cook very quickly.
- Now you need to assemble the tacos. I like to quickly heat up the tortillas first, I place them over a gas burner and one by one I heat them over a medium flame for 4 seconds a side.
- To assemble the tacos, first slice the burgers in half, and break the slices of bacon in half. Fill each tortilla with the lettuce, then a half round slice of tomato, some avocado, a burger (use both halves of one burger), some grilled onions, some pickles, and about a teaspoon of the animal sauce. Continue until all of the burgers are assembled, and then eat!
