What to Make with Poblano Cream Sauce

My poblano cream sauce is one of the most popular recipes on this site. I love it too! I have even created several recipes that use the sauce as an ingredient, and today I am sharing them all with you.

Poblano cream sauce was inspired by a chimichanga that I had at Port Fonda in Kansas City. At first taste I knew that I needed to recreate the recipe at home because it would be impractical to be making regular trips to Kansas City to eat chimichangas.

I successfully recreated the recipe for the poblano cream sauce - making sure it was an equal balance of creamy and spicy. Then an amazing thing happened, the recipe post started to receive and unprecedented amount of detailed and thoughtful comments. 

"I made a double batch of this because I was trusting the reviews. It was YUMMO! I made chicken and chile enchiladas, homemade refried beans for the first time (everyone needs to do this by the way...) and rice w/ tomatoes & corn. What a fabulous meal we had. I intend on making again and using for an all purpose type sauce, I've been dreaming of a Mexi-style eggs bennie with this sauce with chorizio sausage instead of back bacon... Mouth waters just thinking about it." wrote one reader from Canada.

People shared new and different ways to serve the sauce, "Also tastes great for nachos and as a dip for pork rinds and the like...." explained Linda.

Another reader said, "Try covering your mashed potatoes with this, great! Yummy."

The recipe for the sauce makes about 2 ½ cups, so I always have some leftover, which gave me the opportunity to add it to new recipes. Over time, the list grew:

Chicken Chimichangas

The recipe that inspired the poblano cream sauce is still one of my favorites. I made two giant trays of chicken chimichangas for a party once and they were a major hit. These chimichangas are filled with shredded chicken, sautéed onion, refried beans, rice, and cheese, then baked and covered with the poblano sauce.

Similar to the buffalo chicken dip that is so popular in the Midwest, these enchiladas are filled with a mixture of chicken, buffalo sauce, and cream cheese and then topped with poblano cream sauce and monterrey jack cheese.

Mexican Flatbread

Take store-bought pizza dough, spread the poblano cream sauce on top, and then add bacon, vegetables, and cheese. This works as an easy appetizer or a meal.

Breakfast Burritos

Get your morning off on the right foot with these burritos stuffed with chorizo, scrambled eggs, cheese, and beans. You can even make a big batch of these burritos and eat them for breakfast throughout the week.

Ranch Chicken Salad Bowls

Use the sauce instead of salad dressing and add it to a bowl of greens with black beans, corn, carrots, tomatoes, avocado, cheddar, and ranch season chicken. It's one of my favorite ways to eat my veggies.
