Grilled Zucchini with Tomato and Goat Cheese

Ready for a really easy recipe? Grilled zucchini topped with tomato sauce and goat cheese is a fresh tasting dish that can be served as an appetizer or meal. It is a healthy variation of pizza that can be served as a quick weeknight meal. I love simple rustic meals made of a few simple ingredients. Each ingredient plays an equally important role here. If you want to serve this as a bite sized appetizer, you can slice the zucchini into round discs instead of long slices.

You will need:
1 large Zucchini
3 large Tomatoes
2 tablespoons Olive Oil
¼ cup Goat Cheese
¼ teaspoon Salt
⅛ teaspoon Pepper

Step 1:
Dice the tomatoes. Then heat 1 tablespoon olive oil in a saucepan over medium heat. Add the tomatoes, salt, and pepper. Let simmer over medium heat and reduce for 20 minutes. The tomatoes will break down into a deeper red sauce. While the sauce simmers, get to work on grilling the zucchini.

Step 2:
Slice the zucchini into long slices ¼ inch thick. Heat a grill pan over medium heat and add the remaining olive oil. Add the sliced zucchini and grill each side for about 4 minutes, until the zucchini is tender and has visible grill marks.

Step 3:
To assemble the zucchini boats, place the grilled zucchini on a platter, then generously spoon the tomato sauce over, and top with crumbled goat cheese. Serve immediately.
