An Easy Packable Lunch: Turkey and Cheese Pinwheels

Do you pack lunches? For yourself, your husband, your kids? When I worked in an office I tried to pack my lunch every day. The challenge was to come up with an easy packable lunch that I would look forward to eating. These days now that I am blogging from the comfort of my home I have a very different problem, instead of getting excited for a break at lunchtime, I often forget to eat lunch. I get so hyper focused on what I am working on that lunchtime passes and suddenly it is 4pm and I am getting hangry! I have realized that I need to make a better effort to eat lunch, and having a lunch ready to go in the fridge is a huge help. Having lunch ready also means that all I need to do is go grab it from the fridge - I am not needing to take a 20-minute break to make something from whatever I can find in the fridge.

One of my favorite packable lunches are these turkey and cheese pinwheels - which is basically a turkey wrap cut into cute little two-bite pieces. The recipe has all of the elements of a great lunch, it is loaded with fresh flavors, it is a little bit cheesy, and it has some veggies. Using a wrap is a great way to cut some carbs too.

These turkey and cheese pinwheels can be made in just about 5 minutes, and I really like how the carrots and sliced cucumbers give the pinwheels a bit of crunchy texture. To make the pinwheels I spread a thin layer of creamy alouette cheese over a spinach wrap, added a layer of turkey, then another thin layer of the cheese (it helps hold everything together) and then added some thinly sliced cucumbers, shredded carrots, and spinach on top. Then I just rolled everything up and cut it into slices.

I love the bento box lunch box trend. It's a perfect tool for portion control. I picked up this lunchbox at Target and it is big enough to hold a full meal for an adult - or lunch and a snack for a child. I paired my turkey pinwheels with some homemade roasted garlic and lemon hummus with baby carrots and a small handful of chocolate dipped pretzels for a treat.

An Easy Packable Lunch: Turkey and Cheese Pinwheels

Ingredients

  • 1 Tortilla
  • 2 Slices of Turkey
  • about 2 tablespoons Alouette Cheese
  • Shredded Carrot about 2 tablespoons
  • Thinly Sliced Cucumber about 4 slices
  • Baby Spinach a small handful

Instructions

  • Lay the tortilla out on a work surface. Spread a thin layer of the alouette cheese on top. Add the turkey on top, and add another thin layer of the cheese.
  • Spread the shreded carrot, cucumber, and spinach out over the turkey and cheese.
  • Tightly roll up the tortilla. Then slice into one inch thick pieces. Either pack for lunch or eat right away.
