Easy Chicken Noodle Soup

I was so sick for 5 days straight. I very rarely take public transportation because I work across the street from home, but last Tuesday we took the el to and from the Lorde concert (it was amazing). I think that the combination of being on the el at rush hour, and being at a concert with thousands of teenagers, brought on the nastiest cold I have had in years, because when I woke up in the middle of the night after the concert my throat was aching.

After five days of being sick, all I wanted was chicken noodle soup, so I created this quick and easy recipe. It must be the cure because the next day I woke up feeling much better.

Easy Chicken Noodle Soup

I found some spinach in my fridge and decided to add it in. I chose not to add celery. You can do whatever you want. If my husband wasn't also having the soup for dinner I would have added broccoli. Want to get fancy? Add tortellini instead of egg noodles.

Serves: 4
Total Time: 45 minutes

You will need:
1 tablespoon Butter
½ cup chopped Onions
2 cloves Garlic, pressed with a garlic press
2 teaspoons Olive Oil
3 large Chicken Breasts
Salt and Pepper
5 cups Chicken Broth
1 cup chopped Carrots
1 cup Egg Noodles
½ cup fresh chopped Spinach

Step 1:
Heat a pot over medium heat. Melt the butter, and then add the onions. Cook for 1 minute, and then add the garlic. Cook the onions until they are soft, then remove from the pot and set aside.

Step 2:
Using the same pot, increase the heat to high. Drizzle with olive oil. Sprinkle the chicken with salt and pepper. Add the chicken to the pot, and sear each side until browned, this will take about 3 minutes.

Step 3:
Once the chicken is browned, remove it from the pot, and set aside.

Step 4:
Add the chicken broth to the same pot and bring to a boil. Then add the browned chicken breasts to the boiling broth. Cook for 7 minutes, or until the chicken is not longer pink in the center. Remove the chicken from the pot, and set aside.

Step 5:
Add the onion, carrot, egg noodles, and spinach to the pot.

Step 7:
Meanwhile, use two forks to shred the chicken.

Step 8:
Once the noodles have cooked, return the chicken to the pot. Heat for a minute, and then serve.
