Chicken, Spinach, Goat Cheese and Tomato Casserole

Don't you love Monday night meals that seem bit fancy? This no-fuss dish was pulled together in just 15 minutes of preparation time last night. The chicken is stuffed with spinach and goat cheese and topped with a slice of tomato and a bit of pesto and Parmesan. It is an Italian inspired dish that isn't heavy at all.

This would be a great meal to prepare for a dinner party. It only requires the most basic cooking stills and a little bit of time, but guests would think you spent hours in the kitchen.

Want to switch things up a little? Use ricotta instead of goat cheese, or kale instead of spinach.

Serves: 4
Total Time: 1 hour
You will need:
1 pound Chicken Breasts (thin cut or pounded until thin)
1 tablespoon Olive Oil
1 pound fresh Baby Spinach
¼ cup Goat Cheese
2 Tomatoes, sliced
⅓ cup Pesto
¼ cup Parmesan

Step 1:

Preheat oven to 350 degrees. Heat olive oil over medium heat. Add the spinach and cover until wilted. Add the goat cheese and stir until melted.

Step 2:

Place 3 tablespoons of the sautéed spinach on each piece of chicken. Fold the chicken around the spinach. Place the stuffed chicken in a baking dish.

Step 3:

Put on slice of tomato on top of each piece of chicken.

Step 4:

Put a tablespoon of pesto and then a tablespoon of Parmesan on top of each tomato slice.

Step 5:

Bake for 1 hour or until the chicken reaches 165 degrees.
