Cheesy Baked Potatoes

A fully loaded baked potato definitely counts as dinner. Charles loves having this for dinner, and requested it recently. To turn a simple baked potato into dinner, we added shredded chicken, broccoli, and a homemade cheese sauce. Adding a cheese sauce, instead of just shredded cheese, is so much better.

This meal is a great way to use up any leftover chicken. You can get creative and add any toppings you want to this meal. Bacon, jalapeños, tomatoes, and roasted peppers would all be delicious. I bet that leftover taco beef and toppings would be pretty fantastic too....

Total Time: 1 hour
Active time: 20 minutes
Serves: 2

You will need:
2 large Potatoes
1 large Chicken Breast
1 cup Chicken Broth
2 teaspoons Butter
Salt
1 cup 2% Milk
1 tablespoon Flour
1 cup Shredded Cheddar
1 head of Broccoli

Step 1:
Heat oven to 400 degrees. Rinse and dry the potatoes. Then rub the butter all over the potatoes. Generously sprinkle with salt. Place in the oven to bake.

Step 2:
After the potatoes have been baking for 40 minutes, get to work on the toppings. Slice the chicken breast in half. Then bring 2 cups of water and 1 cup of chicken broth to a boil. Once boiling, add the chicken. Boil for 5-6 minutes, until the chicken is no longer pink. Then remove from the pot and set aside.

Step 3:
Whisk the flour and milk together in a pot. Bring to a slow boil, and let bubble for one minute so that the sauce can thicken. Then add the cheese and stir until melted. Keep warm.

Step 4:
I cooked the broccoli in the microwave by chopping it, placing it in a bowl with an inch of water, and microwaving it for a minute and a half.

Step 5:
Use a fork to shred the chicken.

Step 6:
Remove the potatoes from the oven, slice in half, top with chicken and broccoli and spoon cheese sauce over.
