Fall is in full swing, and I thought that I would pull together some of my favorite butternut squash recipes for you. Butternut squash is a food that my husband and I both love, and I prepare it often when it is in season. I have rounded up recipes for entrees, salads, and side dishes that use butternut squash as a main ingredient.
This Farro and Butternut Squash Salad with Goat Cheese, Walnuts, and Arugula was inspired by a dish I tried at Davanti Enoteca, and it can be served as a side dish or a lunch. If you aren’t familiar with farro, it is a hearty grain that tastes like a cross between rice and barley.
I made this Goat Cheese, Butternut Squash, and Sage Stuffed Pork Tenderloin for Christmas dinner last year and my impossible to please mother-in-law actually loved it! It’s a main dish that is elegant but really easy to prepare, and formal enough for the holidays.
