Do you meal prep? The trend of prepping meals or elements of meals for the week in bulk on the weekend is one that I love. Meal prepping can take many different forms. Meal prepping can be as simple as cooking up chicken breasts or making shredded buffalo chicken to use in meals throughout the week, or it can be assembling and packing up meals to bring to work or eat for dinner during the week.

I like this trend because taking time to plan and organize my meals for the week means fewer trips to the grocery store and less time spent in the kitchen cooking. Sometimes I meal prep just by purchasing a rotisserie chicken at the grocery store and shredding up all the meat.

Cooked chicken can be shredded up and seasoned with buffalo sauce, sliced and added to salads, stirred into a pasta dish, or added to a casserole. I think that preparing extra meat is one of the easiest and most effective ways to meal prep. Load up your slow cooker with chicken or beef on Sunday and find creative ways to use it in meals on weeknights.
