A Southwest Cobb Salad is a quick no-cook meal that I love to eat on hot summer nights.

This Southwest Cobb Salad is inspired by a salad that I used to get for lunch when I was working my 9-5 corporate job. It’s made with greens topped with diced chicken, cheddar cheese, corn, tomatoes, avocado, broccoli, and black beans.

I used to pay $12 for this salad when I ordered it from the restaurant below my office. Now instead of ordering it, I make my meal prep chicken and then prepare a couple of salads for the week. I love working from home, but sometimes lunch becomes a big production and a massive mess that makes my day less productive. Meal prepping some Southwest Cobb Salads is a big time saver.

This meal is everything I am looking for in a dinner this time of year. It’s healthy and easy to prepare. If I want to save time or don’t want to turn on the oven I use a rotisserie chicken from the grocery store. With that simple hack, this meal becomes no-cook!

Sometimes I steam and broccoli in the microwave, and sometimes I eat it raw. Broccoli is my favorite vegetable, so I always try to add it to recipes. You can adjust this recipe to add your favorite veggies, or to leave out any veggies that you don’t love.

Chopped bell peppers, green onion, shredded carrot, and cucumber would all be nice additions to this meal. Or you can add bacon, or maybe some tortilla strips to add a touch of crunch. While you can use any dressing that you like, I used my homemade ranch dressing which comes together in just 5 minutes.

A Southwest Cobb Salad topped with chicken, cheddar cheese, corn, tomatoes, avocado, broccoli, and black beans is a quick, easy, and healthy no-cook​ meal! Plus, you can meal prep this and bring it to work for lunch.

Ingredients

  • 1/2 cup of diced Chicken
  • 1/3 cup Corn
  • 1/3 cup chopped Tomato
  • 1/3 cup diced Avocado
  • 1/3 cup chopped Broccoli
  • 1/3 cup Black Beans
  • 2 cups Greens
  • Ranch Dressing

Instructions

Divide the greens between two plates or meal prep containers.

If you want to steam the broccoli, I recommend doing this in the microwave. Rinse the broccoli and place it in a microwave-safe bowl with a couple of tablespoons of water. Microwave for 2 minutes on the default setting (I just press 30 seconds four times). Remove from the microwave and drain. I like to sprinkle a touch of salt on top of the broccoli.

I like to arrange the chicken, corn, tomatoes, avocado, broccoli, and black beans into rows. Divide each of these ingredients between the two salads.

Either store for later, or top with ranch dressing and eat!
