Watermelon, Balsamic, and Feta Salad

This refreshing three ingredient Watermelon, Balsamic, and Feta Salad is perfect for summer and can be served as an appetizer or a salad. I love how the sweetness of the watermelon is balanced by the salty feta. The balsamic reduction adds just a little acidity and it somehow pulls the flavor of the watermelon and feta together.

This is a remarkably easy dish to prepare - I buy sliced watermelon which makes it even easier. You can assemble this dish in a big salad bowl, or you can place small pieces of watermelon and cubes of feta on toothpicks, drizzle with balsamic, and serve as an appetizer.

I am not going to get into proportions, this recipe can be easily adjusted to serve one, or a crowd. I have been eating this as an after work snack.

You will need:
Watermelon
Feta (crumbed if serving as a salad, cut into cubes if serving as an app)
Balsamic Vinegar

Step 1:
Heat the balsamic vinegar in a saucepan over medium heat. Bring to a bubble. Let the balsamic reduce by half. It will become thick and syrupy. Let cool.

Step 2:
Chop the watermelon. I always buy it sliced because it saves time, and because I don't have a car and really really don't want to carry an entire watermelon home. Combine the watermelon and feta in a bowl. Drizzle with the balsamic immediately before serving. The watermelon will soak up the balsamic, which tastes great, but doesn't look too appetizing. This dish is much prettier if the balsamic is added at the last minute.
