I have a thing for S’mores. The crunchy Graham Cracker, the gooey melted marshmallow, and the rich melted chocolate- it is something that I can’t say no to. There is something nostalgic about s’mores. They remind me of summertime campfires. These brownies are a fun less messy way to enjoy the treat from my childhood.

I recently discovered Sprinkles’ S’mores Cupcake, and I have been wanting to make something similar ever since. Instead of making cupcakes, I made S’mores Brownies, and they are addictive. These S’mores Brownies taste like an extra chocolatey s’more. Since the marshmallow cools before you cut and serve these brownies, they are not messy like traditional s’mores.

This recipe is super simple. I used boxed brownie mix, and added a layer of Graham Cracker, some chocolate chips, and marshmallow fluff. This is an easy variation of the basic boxed brownie recipe that doesn’t add much preparation time. If you really want to go nuts you can add Ghirardelli Caramel Chocolate Squares instead of milk chocolate chips.

You will need:
1 box Brownie Mix (plus the ingredient called for on the box)
1 jar Marshmallow Fluff (or a bag of marshmallows)
1 cup Graham Cracker Crumbs
3 tablespoons Butter
1 cup Milk Chocolate Chips

Step 1:
Heat oven to 350 degrees. Melt the butter. Mix the melted butter and the Graham Cracker Crumbs. Press the mixture into the bottom of a 10×10 inch pan.

Step 2:
Prepare the brownie mix according to the directions on the box. Pour the brownie mix over the Graham Cracker Crumbs. Place in the oven on a center rack.

Step 3:
Bake the brownies until a toothpick inserted into the center comes out clean. The bake time will be about 25-30 minutes.

Step 4:
Pour the chocolate chips over the top of the brownies. Return to the oven for 1 minute – this will melt the chocolate chips. Use a knife to spread the melted chocolate evenly over the brownies.

Step 5:
Spread fluff or marshmallows over the top of the melted chocolate. Then turn the oven on to broil. Place the brownies back in the oven, and watch carefully until the marshmallow browns. This will take about 1 minute. Then remove from the oven and let cool. Once cooled, cut and serve.
