Scrambled Egg Grilled Cheese

A Scrambled Egg Grilled Cheese is an easy make brunch that combines two of my favorite foods. This is the ultimate breakfast sandwich, and one of my go-to breakfasts to make at home on the weekend.

This meal is part breakfast sandwich and part grilled cheese. I added scrambled eggs, mashed avocado, cheddar, bacon, tomato, and spinach – all of the ingredients I like to add to a breakfast sandwich.

I like taking the time to grill the sandwich because I think that it tastes better toasted and it gets the cheese all melty and it holds everything together. The best part might be that by putting all of these ingredients into a sandwich, you get a little bit of everything in each bite.

I added a lot of ingredients. The secret to preventing the sandwich from falling apart is to add a small layer of cheese between each of the other ingredients. My sandwich started off very tall, but as the cheese melts the sandwich gets a little shorter, and easier to flip.

I used a combination of sharp cheddar cheese and butterkäse. I love the sharpness of cheddar, and the buttery taste of butterkäse and how well it melts. Together these cheese make this scrambled egg grilled cheese delicious, cheesy, and structurally sound. If you can’t find butterkäse, you can use more cheddar or use another cheese that melts well, like colby or monterey jack.

If you want to add a bit of spice to this meal you can add some spicy guacamole instead of avocado, add some slices of jalapeño, or add a bit of hot sauce.

Scrambled Egg Grilled Cheese

A scrambled egg grilled cheese is a breakfast sandwich taken to the next level. This warm toasty grilled cheese is filled with scrambled eggs, bacon, tomatoes, avocado, and melted cheese.

Ingredients

  • 4 slices of Bacon
  • 5 Eggs
  • Salt and Pepper
  • 4 slices of Bread
  • about 2 tablespoons Butter
  • 1 tablespoon Mayonnaise
  • 1/2 of an Avocado, mashed
  • 3 slices of Tomato
  • a handful of Spinach or Arugula
  • 1/2 cup shredded Cheddar
  • 1/2 cup Butterkäse

Instructions

First start cooking the bacon. Place the bacon a baking sheet lined with foil and bake in the oven at 400 degrees for about 10 minutes, until crisp. Then place the cooked bacon on a paper towel and blot the excess grease.
While the bacon cooks, prepare the eggs. Crack the eggs into a bowl and whisk them together. Then melt 1 teaspoon of butter in a skillet over medium heat. Add the eggs, season with salt and pepper, and stir frequently to scramble.
Once the eggs are cooked, assemble the grilled cheese. Butter the outside of the slices of bread. Spread 1/2 tablespoon of mayonnaise on top of one of the slices of bread, and spread mashed avocado on top of the other slice of bread. Layer the bacon, tomatoes, spinach, and egg on top of the bread, spreading a thin layer of cheese between each layer. Repeat this process to make the second sandwich.
Heat a clean skillet over medium heat. Toast each side of the sandwich until golden brown. Serve immediately.

The grilled cheese looks delicious. Such a great combination. I obviously love avocado and scrambled eggs and those ingredients are even better on a grilled cheese.

This looks so delicious! I'm a creature of habit always end up having oatmeal for breakfast {except for weekends, obviously} but I need to try this out!
