Recipes that celebrate summer

Memorial Day weekend is just around the corner, which means summer has finally arrived! To celebrate, I teamed up with some of my favorite bloggers to share recipes that celebrate summer - recipes using seasonal ingredients, cocktails to cool down with on hot days, and meals perfect for grilling or picnics. They are exactly the type of foods you want to enjoy after being cooped up all winter.

Blueberry-Green-Smoothie-Bowl

My friend Jordan of Smile Sandwich has a knack for making super healthy recipes that are super delicious. Her Blueberry "Green" Smoothie Bowl is the ultimate summertime breakfast - it's got mixed berries, kale, banana, almond milk, topped with flax seeds, sliced almonds, shredded coconut and blueberries. It's the type of meal that you feel really good about eating.

Love Sweet tea? Jocelyn of Grandbaby Cakes has a classic Southern Sweet Tea that will make you feel refreshed on even the hottest summer days. She adds both lemon and mint to boost the flavor.

Fish Tacos

Fish tacos are the quintessential summertime meal, and Regan of Up Close & Tasty has a mouthwatering recipe for Fish Tacos with a Mango Cucumber Salsa. She used mahi mahi, but you can use your favorite fish, and then top it with Regan's refreshing and fruity salsa made with mango, cucumbers, shallots, mint and chile.

My recipe for Mexican Corn Pasta Salad makes for a great lunch or side dish. I love the extra crunch from the corn.

Looking for dessert? Lindsey from Butter & Type has a quick and easy recipe for a Pistachio Crusted Strawberry Galette made with Pillsbury Pie Dough. It's a great dessert to bring to a picnic, and you can easily add your own twist by adding some blueberries, raspberries, or blackberries.

Jenny from Honey & Birch is a whiz at making cocktails and her Strawberry Rhubarb Daiquiri looks the perfect drink to serve at a summertime soiree. It's made a with strawberry rhubarb simple syrup - it's so easy to make and you can keep it on hand to add to other cocktails too!
