Prosciutto, Goat Cheese, Tomato Bites

This easy appetizer is made with just three ingredients and in just 20 minutes. Creamy goat cheese is spread on thin slices of prosciutto and then it is wrapped around a cherry tomato. This recipe is equal parts simple and delicious. I love how the tomato gets soft and slightly cooked, the warm goat cheese is so creamy, and the prosciutto is a little crisp. It is a nice combination of flavors and textures. These prosciutto, goat cheese, and tomato bites are so fun to eat- the tomatoes explode in your mouth as you eat them.

You can mix things up by using different types of goat cheese and prosciutto. I used a fiery red chili prosciutto which added a little kick of spice to this snack. You could also used herbed goat cheese. Feel free to be creative and mix it up. It might fun to to experiment with putting these bites in salad too, I feel like a few of these bites, with spinach and a balsamic dressing would be a winner.

Total time: 20 minutes
Serves: 4

You will need:
One Pint Cherry Tomatoes
2 ounces Goat Cheese
1 package of Prosciutto

Step 1:
Heat oven to 400 degrees.

Step 2:
Slice the prosciutto in half width-wise. Place about ½ teaspoon of goat cheese in the center. Put the tomato on top. Wrap the prosciutto around the tomato. Then place on a baking sheet. Repeat until you have used all the ingredients.

Step 3:
Bake for 10 minutes and serve. You can serve these hot or room temperature.
