The Kittchen Chicken Quinoa Bowl at Burrito Beach

Have you picked up on the fact that I love love love Mexican food? My love of eating, and Mexican food, has led to the most exciting thing! My very own menu item at a Mexican restuarant! I am thrilled to announce that my creation - a Quinoa Chicken Bowl - is launching at Burrito Beach today!

Burrito Beach is a fast casual restaurant with really great Mexican food. One of the things that I love about Burrito Beach is that they have an entire selection of their menu - the Beach Body Menu - that is devoted to dishes under 500 calories! Plus, the friendly staff customizes your order with toppings of your choice so that you get exactly what you want.

I recently became friends with the lovely folks over at Burrito Beach, and they suggested that I come up with a special for their menu. This was a no brainer since I am a big and of Burrito Beach, and they have plenty of ingredients for me to play around with.

After some taste testing, I created a burrito bowl made with Organic Quinoa, Char-Grilled Chicken, Guacamole, Pickled Onions, Black Beans, Corn, Tomatoes, Mexican Slaw, and Warm Corn Tortillas. It's healthy and hearty, and loaded with flavor and it is launching Burrito Beach's Chicago Tastemaker Series. The best part is that for every Quinoa Chicken Bowl sold, a donation will be made to Chicago's Inspiration Corporation, which runs Inspiration Kitchens. Inspiration Corporation provides housing services, employment services, and foodservice training to those in need. It is an incredible organization that is working to solve Chicago's homelessness problem by empowering people with job skills and interview training.

My Quinoa Chicken Bowl is currently available at Burrito Beach's five Chicago locations (in Streeterville, at Ogilvie Station, at Union Station, on LaSalle Street in the Loop, and in Illinois Center).
