Healthy eating and a busy lifestyle have a tendency to clash. My new favorite way to save time and to eat fresh healthy food is my Door to Door Organics subscription. This week I made a fun fall salad with some of the fruits and vegetables from my recent Door to Door Organics deliveries. I tore up a mix of kale and lettuce, topped it with pomegranate seeds, sliced celery, goat cheese, and red pear. Then I squeezed some lemon on top, and drizzled some olive oil and balsamic vinegar over. It was a simple, no cooking required meal. I loved how the fresh pomegranate seeds, lemon juice, olive oil, and balsamic vinegar blended together creating a dressing.
