Maple Roasted Sweet Potatoes

Being on the Paelo Diet means cutting out sugar. It isn’t easy, but I have learned to satisfy my sweet tooth by creating Paleo-friendly recipes that use naturally sweet ingredients – like these Maple Roasted Sweet Potatoes. I absolutely loved this sweet and salty side dish. The potatoes were soft on the inside, slightly crisp on the outside, and lightly glazed in butter, salt, and maple syrup. This is a side dish that works any time of the day – we had it with dinner, but I think this would be a fun breakfast side too. Next time I will be making a double batch so I can eat the leftovers with breakfast the next day.

Maple Roasted Sweet Potatoes

I served the Maple Roasted Sweet Potatoes with chicken thighs cooked with a sweet and spicy mustard sauce and green beans.

Full disclosure: the strictest Paleo followers don’t eat sweet potato or maple syrup. While others, like me, view these ingredients as somewhat of a Paleo grey area where these foods are ok once in a while.

Serves: 2
Total Time: 1 hour

You will need:
2 medium Sweet Potatoes
1 1/2 tablespoons Butter (I use grass-fed)
1 1/2 tablespoons Maple Syrup
1/4 teaspoon Salt
dash of Pepper

Step 1:
Heat your oven to 300 degrees. Peel the sweet potatoes. Then slice into pieces between 1/4 and 1/8 of an inch thick.

Step 2:
Place all ingredients in a bowl and toss together. Then lay the sweet potatoes out on a baking sheet in a single layer.

Step 3:
Bake the sweet potato slices for 20 minutes, then remove from the oven and flip the sweet potato slices. Then return the sweet potatoes to the oven and bake for another 15 minutes.

Step 4:
Finally, in order to brown the sweet potatoes, turn on the broiler. Watch closely because the potatoes will brown quickly. It will take about 3-5 minutes. Flip the potatoes to brown the other side. Once  both sides of the potatoes have browned, remove from the oven and serve immediately.

I love maple syrup as a replacement for refined sugars. Are you allowed to have honey? It works so well in baking!
