I recently returned from Italy, and while I was there I developed an appreciation for the Aperol Spritz. It’s become my new summertime drink – it’s light and refreshing without being too sweet. Taking a sip seems to help me make the transition from the workweek to the summer weekends that are meant to be savored.

One of my favorite stops on my Italy trip was Turin, a lively city filled with restaurants with sidewalk patios. Each evening, once the workday ended the patios will fill up with impeccably dressed women sipping Aperol Spritzes. The quartets of women sipping their Aperol Spritzes made me feel like I had walked into an Italian version of Sex and The City. It was a pleasant reminder that summers are meant for Aperol Spritzes.

An Aperol Spritz has the perfect balance of bitter and sweet flavors along with a touch of effervescence. It’s a cocktail made to be sipped on a rooftop during the summer – which is just what I did with my girl friends.

On a sunny day, I gathered up a few friends and we went up to the roof. Chicago summer days are the best – and this year warm rain-free days have been hard to come by, so it seemed fitting to celebrate the weather with friends and Aperol Spritzes on the roof.

The classic Aperol Spritz was created in 1919 – 99 years ago! And it has remained unchanged since then. It’s a true classic cocktail, and luckily I have to foolproof recipe:

How to make an Aperol Spritz:

Pour a generous amount of ice into a stemmed wine glass.

Combine 3 parts of Prosecco D.O.C.

Add 2 parts Aperol

Add a splash of Soda

Gently stir, and garnish with a slice of orange and a paper straw.
