Sriracha Parmesan Roasted Broccoli-3

Broccoli has always been my favorite vegetable. As a kid I would eat heaping portions of it. Recently I while I was filming a video with the United Fresh Produce Association, I tried the roasted broccoli at The Purple Pig, and I was inspired to create my own roasted broccoli recipe. I think that people tend to steam or boil broccoli, but roasting it is easier, and it gives you the ability to cook the broccoli in a sauce, giving it more flavor.

While The Purple Pig serves roasted broccoli with garlic and an anchovy vinaigrette, I decided to give my recipe a kick of spice. I made Sriracha Parmesan Roasted Broccoli with lemon, garlic, and olive oil. And it was so good that I ate the entire bowl.. two days in a row.

The preparation time for this recipe is just a couple of minutes, and it can easily be scaled, and you can bake it alongside your main course. I added just enough sriracha to give the broccoli spice, without it overwhelming the other flavors. By roasting the broccoli it becomes soft and absorbs the flavor of the sauce, while still being al dente. It's a touch crisper than steamed or boiled broccoli.

Broccoli is considered one of the world's healthiest vegetables. It is a wonderful source of dietary fiber, Vitamin A, and Vitamin C. It also has more protein than most vegetables. Are you a fan of broccoli? Have you tried roasting it before?

Roasted Sriracha Parmesan Broccoli

Ingredients

  • 2 Heads of Broccoli
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Olive Oil
  • ½ teaspoon Sriracha
  • 1 clove of Garlic minced
  • ¼ teaspoons Salt
  • dash of Black Pepper
  • ¼ cup Parmesan

Instructions

  • Heat your oven to 350 degrees, then chop and rinse the broccoli.
  • In a medium bowl, combine the lemon juice, olive oil, sriracha, garlic, salt, and pepper.
  • Add the broccoli to the bowl and toss it in the sauce.
  • Pour the broccoli and all of the sauce into a baking pan. Sprinkle the parmesan over.
  • Bake for 25 minutes.
