I like to simply season roasted carrots with butter, salt, and honey. The honey brings out the natural sweetness of the carrots and the salt gives the carrots an irresistible sweet and salty flavor combination. Roasting the carrots almost caramelizes them.
Carrots are one of those vegetables that everyone loves. This recipe for roasted carrots can be pulled together with just five minutes of preparation time, and 45 minutes of cook time. The carrots are slathered in butter, seasoned with salt and honey and then roasted. This is such a simple side dish that it would almost be silly not to add it to your dinner menu.
You can opt to rinse and roast your carrots whole, but if you want them to cook more quickly, you might want to chop them or slice them in half. The smaller you slice the faster they will roast. You can also opt to use baby carrots instead of whole carrots. Did you know that baby carrots aren’t really “baby” at all? They are just normal carrots that go through a machine! Crazy, right?
I usually buy packages of multi-colored carrots. Somehow they seem a little fancier, and I love how they add a pop of color to a meal.
I like to cook the carrots until they are very soft and caramelized. It’s hard to overcook a carrot, some restaurants even serve them charred! I usually cook carrots for at least 45 minutes, but sometimes I cook them even longer, they seem to get sweeter the longer they roast.

How to Make Roasted Carrots:
- 12 carrots
- 1 1/2 tablespoons Butter
- 1/4 teaspoon Salt
- 1 tablespoon Honey
Rinse the carrots, or peel the carrots. I opted to just rinse them.
You can either keep the carrots whole, slice then in half vertically, or chop them up. If you chop the carrots they will roast more quickly.
Arrange the carrots on a parchment-lined baking sheet. The parchment helps to make sure that the carrots will cook evenly.
Melt the butter. Brush the melted butter over the carrots making sure they are completely coated with butter. Drizzle the honey and sprinkle the salt over.
Roast the carrots in an oven heated to 350 degrees. The carrots will be beautifully caramelized after 35-45 minutes of roasting.
