It is such a busy day, and I am heading out to join some of my blogging friends at the Roof at the Wit Hotel for Movie Night. I prepared a super quick and easy pesto caprese salad for dinner. This dish can be served as an appetizer or as a meal. Simply layer fresh sliced tomatoes, fresh mozzarella, and pesto. Or, if you wanted a heartier salad you could chop the tomatoes and mozzarella, add pasta and toss in the pesto.
