My Favorite Healthy Recipes

Indulge a little too much over the holidays? I know I did. Now I am working to get back on track (and hoping to lose a couple extra pounds) by focusing on making healthy recipes that I love. I truly believe that the best way to get healthy is to cook for yourself; that way you know precisely what you are eating.

Today I am sharing some of my favorite healthy recipes so we can all start off 2015 by eating a bit better.

I think the most common go-to healthy meal is salad. Unfortunately salad can be a bit boring. But! This Balsamic Chicken and Sweet Potato Salad isn’t the least bit boring, and it’s paleo!

Short on time? How about a 5 Minute Southwest Chicken Salad? This is my favorite salad, I even had it for lunch today.

Prefer soup? There is nothing better than Chicken Noodle Soup on a cold day, plus it is loaded with vegetables, and it freezes well.

Are you paleo or vegan? Then this Herb Roasted Tomato Soup is for you. It is a classic tomato soup – but it doesn’t have any cream which keeps it low fat.

Lunchtime can be problematic when trying to stick to a diet. You really need to be packing your own lunch. I make my lunches for the week on Sunday, and making a batch of Turkey Chili in the crockpot couldn’t be easier.

Another healthy lunch that I love is Cranberry Chicken Salad. You can make a big batch on weekends and then use it to make sandwiches, or add it to salads.

How about a snack that is paleo, vegan, and loaded with protein? I’m positively obsessed with this Avocado Pine Nut Puree.

Cutting out weekend brunches is a great way to stay on track. I often make Avocado Toast on weekends. It’s easy and satisfying, and there are endless combinations of toppings which keep things interesting.

Looking for a grab and go weekday breakfast? These low fat Raspberry Lemon Curd Muffins are great.

This Cashew Chicken Quinoa is a dinner that is loaded with vegetables, and packed with flavor. You can add extra sriracha to make it spicy too.

I know that dieting can involve eating lots of chicken. Keep it interesting and make Lemon Sage Chicken. It’s poached in white wine and a touch of butter, and seasoned with lemon and sage.

Missing pasta? Make Spaghetti Squash with Spinach Pine Nut Pesto. It is a meal made almost entirely of vegetables, and it’s paleo and vegan.
