I have a serious sweet tooth, and recently I have been craving summery desserts. Right now I am all about fresh seasonal fruit and ice cream. With that in mind, I have gathered up a collection of recipes for my favorite summertime treats for you.
Peach and Bourbon Pie is a twist on a classic peach pie, and the bourbon adds an extra layer of flavor. Serve it with a scoop of vanilla ice cream and a drizzle of caramel.
Make a batch of these Caramel Brownie Ice Cream Sandwiches and keep them in the freezer for hot days or those spontaneous summer nights when you have friends over.
Nothing says summertime more than a classic Vanilla Bean Strawberry Shortcake. This is a New England style shortcake made with a sweet biscuit and topped with homemade whipped cream and sliced strawberries. (When I was in college I was surprised to learn that strawberry shortcake is totally different outside of New England!)
My Mom is permanently signed up to bring Mom’s Famous Lemon Squares to my father’s rotary club events. These bars have a shortbread crust and a soft baked lemon filling and are topped with powdered sugar. It’s a great dessert to serve to a friend that isn’t big on chocolate.
Have you used bananas to make ice cream? It’s really simple healthy alternative to ice cream, and the frozen bananas do take on a consistency comparable to ice cream. This recipe Peanut Butter Banana Ice Cream Sandwiches combines a granola-like cookie with banana ice cream filling.
Berry Cheesecake Popsicles have creamy cheesecake filling and fresh raspberries and blackberries. You can make this recipe you own by adding your favorite fruits – strawberries, kiwi, and blueberries would also be delicious.
Ice Cream Pie is one of my Dad’s favorite desserts, and it is incredibly easy to prepare and customize to include you favorite ice cream and toppings. I love Caramel Ice Cream Pie made with salted caramel ice cream, caramel, peanut butter chocolate chip cookies, and an oreo crust.
I made these Mini Strawberry Mascarpone Cheesecakes for a party I hosted. I love how fuss free mini desserts are. You set them out and guests can help themselves.
Strawberry Prosecco Popsicles are part summertime treat and part hair of the dog. You only need strawberries and prosecco to make these popsicles, and they are a perfect use for leftover prosecco.
