I am sharing two different easy overnight oats recipes, one for a Peanut Butter that tastes like peanut butter pie, and another for Chocolate Strawberry. These are breakfasts that I look forward to eating. I recommend making a big batch on Sunday evening and making jars of overnight oats of the week ahead. You will feel so ahead of the game going into the work week.

I don’t know about you, but I am not a morning person, and when it comes to eating breakfast I want to eat the easiest option. This is where these easy overnight oats come in – you spend just 5 minutes preparing them the night before, and then you have a healthy grab and go breakfast! When there is a healthy ready to go option available, I will take it.

You probably have most of the ingredients you need to make these recipes in your fridge already. The essential ingredient that you may not have is chia seeds. You can find chia seeds in the baking aisle of your grocery store, and you do want to use them in this recipe because they help to thicken the overnight oats as they sit overnight. They also add a nice texture to the oats.

I love overnight oats because they keep me full for hours. I just grab a jar from the fridge when I am hungry and head right back to work. It is a way for me to have a meal without it interrupting my workday.

While I added peanut butter, strawberries, and chocolate chops to my overnight oats recipes, toppings like granola, coconut flakes, blueberries, and nuts would all be delicious.

These recipes make two 9-10 ounce servings. You can cut the recipe in half, or divide it between four jars if you would like to make smaller servings.

Ingredients

Peanut Butter Overnight Oats:

  • 1 cup of Old Fashioned Oats
  • 2/3 cup Plain Non-Fat Greek Yogurt
  • 2/3 cup Milk
  • 1/4 cup Peanut Butter
  • 2 tablespoons Cream Cheese
  • 2 tablespoons of Chia Seeds
  • 1 tablespoon Honey
  • 1 teaspoon of Vanilla
  • a pinch of Salt

Chocolate Strawberry Overnight Oats:

  • 1 cup of Old Fashioned Oats
  • 2/3 cup Strawberry Non-Fat Greek Yogurt
  • 2/3 cup Milk
  • 3 tablespoons of Chia Seeds
  • 1 teaspoon of Vanilla
  • a pinch of Salt
  • 2 tablespoons Mini Chocolate Chips
  • 1/2 cup Sliced Strawberries

Instructions

Peanut Butter Overnight Oats:

  1. Stir all ingredients together, divide between two - four jars (depending on how large you want the servings to be). I like to add an extra little scoop of peanut butter on the top - this is totally optional.
  2. Refrigerate overnight.

Chocolate Strawberry Overnight Oats:

  1. Stir all ingredients together, except for the strawberries and chocolate chips. I like to layer the oats with the strawberries and mini chocolate chips. I divide the oats between two - four jars and I add a layer of strawberries and chocolate chips in the middle and on the top.
  2. Refrigerate overnight.
