Breakfast Tacos

What is more fun and exciting than scrambled eggs? Turning them into breakfast tacos! Scramble some eggs, and then put them in a flour tortilla and top them with all of your favorites. I added salsa, cheese, sour cream, roasted bell peppers, and spinach. My husband got to make assemble his own, with a different set of toppings. This meal is great for two people who can't agree on what to put in scrambled eggs.

In my case, my fridge is usually stocked with all the necessary ingredients for tacos, but this dish is a great way to use up any leftovers from taco night. The spinach was a somewhat random addition, but I liked the crunch it added to the meal.

Total time: 10 minutes
Serves: 2

You will need:
4 Eggs
1 teaspoon Butter
a splash of Milk
2 Tortillas
Salsa
Cheddar Jack Cheese
Roasted Bell Peppers
Sour Cream
Spinach
* anything else you want to add

Step 1:
Whisk the milk and eggs together. Melt the butter in a skillet, add the eggs, stir frequently until the eggs are solid. (I won't even get into this household's debate about exactly how cooked scrambled eggs should be).

Step 2:
Throw those tortillas in the oven for about 10 seconds, and then go nuts making your scrambled egg tacos with all the toppings your heart desires.
