This hearty salad is anything but boring, and it is incredibly easy to prepare. I topped a wedge of iceberg lettuce with some of the Crockpot BBQ Chicken, black beans, corn, tomato, cheddar cheese and ranch dressing. This meal has lots of veggies and protein and very little fat. Since the chicken is coated in barbecue sauce you don't need to use very much salad dressing.
I like to dice up all the toppings and then we build our own salads. It is a quick way to serve dinner and this way everyone gets exactly what they want.
