Bacon Cheeseburger Stuffed Peppers are an easy to make yet filling appetizer that I have made again and again. This is the type of recipe that is all about assembling ingredients. Anyone can make this, even if you don’t really know how to cook.
I have created a super simple recipe for the perfect party food: Bacon Cheeseburger Stuffed Peppers. The concept is simple. Stuff some seasoned ground beef in a sweet pepper or jalapeño, add some cheddar, wrap it with bacon, and bake it. The result is a mini bacon cheeseburger stuffed inside of a vegetable.
This is the perfect appetizer to serve on Super Bowl Sunday. It covers the bases of having meat, cheese, bacon, and spice. I love this recipe because it is hearty – it’s an appetizer that actually helps fill you up.
You can assemble the peppers a few hours in advance and store them in the fridge before baking. For crispy bacon and to prevent the peppers from getting greasy, it’s best to place the peppers on a baking rack. Line the pan with parchment or foil so that it is easy to clean up the bacon grease that drips to the bottom of the pan as the bacon cooks.
I used a mix of sweet peppers and jalapeños to make this snack. The jalapeños add a kick of spice. I used cheddar cheese, but pepper jack or colby would both be great too. I used beef, but ground turkey, chicken, or beyond meat would work. If you like, you can serve with mustard for dipping.

Bacon Cheeseburger Stuffed Peppers
An easy recipe for sweet peppers and jalapenos filled with seasoned ground beef, cheese, and bacon. Perfect for game days and parties.
Ingredients
- 15 Sweet Peppers or Jalapeños
- 1 pound Ground Beef
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 1 clove crushed Garlic
- 1/4 teaspoon Onion Powder
- 1/2 cup Shredded Cheddar Cheese
- 15 slices of Bacon
Instructions
Heat your oven to 375 degrees. Line a baking sheet with parchment or aluminum foil. Place a baking rack on top. Lining the baking sheet will make for an easy clean up, and the baking rack will ensure optimal bacon crispiness.
Slice the peppers in half, and remove the seeds.
Then mix the beef, salt, garlic, and onion powder together.
Fill each half pepper with the beef mixture. Place some cheese on top.
Cut the slices of bacon in half, and wrap them around the stuffed peppers.
Bake the peppers for 15-20 minutes, until they bacon is crispy. Serve hot.
Notes
You can use sweet peppers or jalapenos.
