Today I am sharing another easy packable lunch recipe. This Cranberry Chicken Salad is one of my favorite lunches. It is made with a store-bought rotisserie chicken, so the preparation time is only 15 minutes. This chicken salad is great in a sandwich or it can be served over salad for a lighter lunch. I suggest making a big batch on Sundays so you can eat this throughout the week.

Servings: 4
2 cups diced Roast Chicken (from a store bought rotisserie chicken)
1/2 cup Mayonnaise
1/4 cup Canned Cranberry Sauce
1/2 cup Chopped Celery
1/2 cup Grapes, cut in half
1/4 cup chopped Walnuts
Bread or Lettuce
Step 1:
Stir the mayonnaise and cranberry sauce together in a mixing bowl.
Step 2:
Add all the other ingredients. Stir until the cranberry mayonnaise is evenly distributed.
Step 3:
Either spread between two slices of bread to make a sandwich, or spoon over chopped lettuce. Pack individuals servings into containers and refrigerate.
