Roast chicken makes the best soup. Sometimes when I don’t have enough time to make soup, I use the leftover chicken to make what I call “Soup Starter”. First I prepare chicken stock using the chicken bones. Then I dice up leftover chicken meat, place it in a container, add any leftover gravy, and then fill the container with the stock. This Soup Starter can easily be turned into any broth based chicken soup. Before I went to Napa I prepared three containers of Soup Starter and froze them. Now that I am back, I can experiment with making a few different soup recipes.
