The inspiration behind this S’mores French Toast was a trip to XO Marshmallow. My friend Lindzi is a co-owner of the world’s first marshmallow café. Yes, you read that right. Lindzi co-owns XO Marshmallow which is a wonderland filled with marshmallow treats.

When I visited the café I discovered their OMG – Ooey Marshmallow Goodness. OMG is like fluff, but fluffier and better. It tastes like clouds of heaven, and it is available in different flavors. If you don’t want to put it on French Toast you could use it to top cupcakes or hot chocolate. (I also want to point out the XO Marshmallow makes and sells gluten-free graham crackers, which I know can be hard to find).

An idea was born, I wanted to use the OMG to make the most over the top French Toast that I could imagine. Graham cracker crusted brioche with OMG, chocolate, caramel, butterscotch chips, and walnuts. It’s almost like s’mores, French Toast, and an ice cream sundae combined. Heck, adding a scoop of ice cream on top of this S’mores French Toast is a solid idea – but you might want to serve it as dessert.

I highly recommend seeking out a loaf of brioche. This light buttery bread soaks up the egg and milk mixture beautifully and makes the very best French Toast. Whole Foods usually sells brioche in the bakery section.

How to Make S’mores French Toast:

S’mores French Toast

This decadent S’mores French Toast is the ideal special occasion breakfast. Soft brioche slices are dunked in a sweet vanilla milk and egg bath and then coated in graham cracker crumbs before being toasted in butter and then covered with fluff, chocolate sauce, caramel, butterscotch chips, and chopped walnuts.

Ingredients

  • 6 Eggs
  • 1 ½ cups Milk I used 1%
  • 1 tablespoon Vanilla
  • ¼ teaspoon Nutmeg
  • a pinch of Salt
  • 2 tablespoons plus 1 tablespoon Sugar
  • a loaf of Brioche
  • about 3 tablespoons of Butter
  • 2 cups of Graham Cracker Crumbs found in the Baking aisle
  • 1 tub of XO Marshmallow Vanilla OMG
  • Chocolate Sauce
  • Caramel Sauce
  • Butterscotch Chips
  • Chopped Walnuts

Instructions

  1. Whisk the eggs, milk, vanilla, nutmeg, salt, and 1 tablespoon sugar together in a shallow bowl.
  2. Combine 2 tablespoons sugar and the graham cracker crumbs in another shallow bowl.
  3. Heat a skillet (or 2) over medium low heat. Add just enough butter to coat the bottom of the skillet. Dunk a slice of brioche in the egg mixture, holding each side in the mixture for 3 seconds, letting the bread the get thoroughly soaked. Then place the bread in the graham cracker crumbs and cover it completely.
  4. Place the graham cracker coated bread in the skillet – and add as many slices of bread as will fit in your pan. Toast each side of the bread, adding more butter to the skillet as necessary.
  5. Continue to make French Toast using up all of your ingredients. You may want to place the cooked French Toast slices on a sheet pan in a warm oven so they keep warm while you are cooking more batches of French Toast.
  6. Once you are done preparing the French Toast, assemble the S’mores French Toast. Place one slice on a plate, add a heaping tablespoon of the OMG and drizzle with chocolate and caramel sauces. Then add another slice of French Toast, more OMG, and more chocolate and caramel sauces on top. Lastly, top with butterscotch chips and chopped walnuts. Enjoy the sugar high!
