In honor of the heatwave that has hit the Midwest, I am sharing a foolproof recipe for Ice Cream Pie. It’s a no bake dessert that is made by simply assembling store bought ingredients. It is the perfect dessert to serve on a hot summer night – you don’t need to turn your oven on, and who doesn’t love ice cream on a hot day? Plus, the pie is a bit fancier than a bowl of ice cream, and you can customize the ice cream flavor and toppings.
For my ice cream pie I used an oreo crust, caramel sauce, salted caramel ice cream, and peanut butter chocolate chip cookies. Chocolate, caramel, and peanut butter is one of my favorite flavor combinations, and it worked well in ice cream pie form. Mint chocolate chip with fudge sauce and graham cracker crust would be equally delicious and perhaps even more refreshing.
I first discovered ice cream pie at Big Daddy’s, the ice cream shop my family always goes to in Wells, Maine. My Dad has ordered enough Coffee Heath Bar Ice Cream Pies over the years that they know it’s him when he places the order. Needless to say, oreo crust with coffee heath bar ice cream, and chocolate fudge is a fantastic group of ingredients.

Ingredients
- 1 Oreo Pie Crust
- Caramel
- 1 Pint of Ice Cream
- 3 Cookies
Instructions
- Let the ice cream sit out for 5 minutes.
- Spread a layer of caramel sauce on the bottom of the pie crust.
- Pour the ice cream into the pie crust and spread it into a single layer.
- Crumble the cookies and add them over the ice cream.
- Add a decorative layer of caramel over the top.
- Let chill in the fridge for at least an hour before serving.
