Mushroom Pepper Cheddar Strata

Stratas are an easy way to feed a crowd breakfast. They can be made a day or two ahead of time and you can add in whatever you like.

When I made this Strata I was working with what I could find in my friend's fridge, but you can add your favorite veggies, bacon or sausage.
You will need:
1 large onion
1 package of mushrooms
3 peppers (I used red, orange and green)
1 ½ cups shredded cheddar
3 cups cubed bread (a good quality white or wheat)
1 teaspoon salt
½ teaspoon pepper
1 cup milk
18 eggs
2 tablespoons butter
a 9x13 inch glass casserole pan
Serves 10-12
Step 1
Chop all the veggies. Sauté onion, mushrooms and peppers in butter until soft (about 3 minutes).  Let cool for at least 15 minutes.  This is very important because otherwise the heat from the veggies will partially cook the eggs.
Step 2
Butter the baking dish then line the bottom of the pan with the bread.
Step 3
Whisk the eggs, milk, salt and pepper together. Pour ½ of the egg mixture over the bread. Spread ½ of the cheese over the egg. Pour the sautéed veggies on top. Then add the rest of the egg and then the rest of the cheese.
Step 4
Bake at 375 degrees for 45 minutes, until the egg is fully cooked. The top should be browned.
Please note that this needs to be made in a shallow baking dish, otherwise it doesn't cook evenly.
