Roasted potatoes unfortunately have the potential to be bland. Garlic Parmesan Ranch Roasted Potatoes are anything but boring. Diced new potatoes are topped with dry ranch seasoning mix, parmesan cheese, garlic, butter, and flour before roasting in the oven just just about an hour. The result is extra crispy potatoes with a balance of garlic, parmesan, and ranch flavors. The seasonings manage to work together without overpowering each other.

It may seem weird to flour to the potato seasonings, but the flour helps to achieve extra crisp potatoes. Apparently the science here is that the flour helps to dry out the potato and make it extra crunchy. I just know that it works! I also think it can help the ranch, parmesan, and garlic stick to the potato.

I love garlic. The three cloves of garlic give these roasted potatoes a distinct garlic flavor, and it might be overwhelming for people to don’t love garlic. Feel free to reduce the amount of garlic based on your preference.

I was serving these potatoes alongside bacon cheeseburger tacos because I was trying to help someone soak up a hangover, and I have a theory that a slightly greasy meal, crispy potatoes, and a glass of pedialyte are the solution. But – if you are serving Garlic Parmesan Ranch Roasted Potatoes with a roast chicken, you can prepare the potatoes and then cook them right in the pan with the chicken. The potatoes will soak up even more flavor from the chicken drippings.

Ingredients

  • 1 ¼ lb Small New Potatoes fingerlings work too
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 2 tablespoons Dry Ranch Dressing Mix
  • 2 tablespoons Grated Parmesan
  • 3 Cloves of Garlic
  • ½ teaspoon Salt
  • ¼ teaspoon Ground Black Pepper

Instructions

  • Heat your oven to 375 degrees. Then rinse the potatoes and dice them into pieces about ¾ inch in size. Place the diced potatoes in a large bowl.
  • Melt the butter and pour it over the potatoes. Add the flour, dry ranch dressing mix, parmesan, garlic, salt, and pepper. Stir until the potatoes are evenly coated.
  • Pour the potatoes out onto a parchment lined baking sheet, and spread them out into a single layer.
  • Roast for 45 minutes to an hour. Until the potatoes are golden brown.
