Egg, Cheddar, and Bacon Biscuits

November is here which means that Thanksgiving (and Christmas!) are just around the corner. I have been working on planning holiday recipes that are easy to prepare for a big group. My parent’s house is always packed with people during the holidays, and with 8 adults under one roof breakfast gets tricky. Inspired by a recent trip to Aldi, I created a simple and hearty breakfast that is easy to prepare for large groups.

My mother has found that the key to Thanksgiving is keeping everyone out of the kitchen while she is cooking. Having breakfast ready is the secret to keeping 6 hungry 20 and 30 somethings out of her kitchen. These Egg, Cheddar, and Bacon Biscuits are just the thing to keep houseguests out of your kitchen. They are basically a baked egg sandwich that can be made ahead of time and then reheated.

This week I am heading out on a two day trip to Aldi’s Test Kitchen in Batavia, Illinois to learn about holiday menu planning and wine pairings. I’m excited because I love holiday cooking, and to top things off my friend Jocelyn is going too! A getaway that involves cooking and girl friends is my favorite type of trip!

During my visit to Aldi’s Test Kitchen I attend a session on food and wine pairings hosted by Sensory Expert Gail Vance Civille and Certified Sommelier Leslee Miller. Leslee will conduct a blind tasting where we will learn how to pair food and wine. Then Gail will explain the science behind the sensory experience of tasting food and wine.

Then we will put everything we learned to work as we take on the Holiday Menu Planning Challenge. I get to sample a selection of Aldi’s holiday recipes and then I will work with a team to build our own holiday menu. By the end of the trip I will be ready to take on the holidays!

Serves: 8 (it’s quite convenient that the serving size is 8 and my family has 8 people)
Total time: 30 minutes
For the Egg, Cheddar, and Bacon Biscuits you will need to visit Aldi and purchase:
Premade Biscuit Dough (1 tube)
8 slices of Bacon
8 slices of Cheddar
*you also need 8 biscuit cutters, about 3 inches in diameter

Step 1:
Heat your oven to 350 degrees. Then open the tube of biscuits, try not be completely startled when it pops open (it gets me every time), and then slice horizontally through the biscuits creating a top and a bottom.

Step 2:
Then stretch the dough so that it fits neatly in the biscuit cutters. The easy way to do this is to place the biscuit cutters on a baking sheet. Place one of the dough halves inside, and then stretch the dough so that it completely fills the space. Repeat doing this with all 8 biscuit bottoms. Lightly stretch the biscuit tops with your hands.

Step 3:
Place a piece of bacon on top. If you want the bacon to be crispy, you should pre-cook it for 5 minutes. Then crack an egg over. Add a slice of cheddar, and place the top of the biscuit over. Repeat for all 8 biscuits.

Step 4:
Bake for 20-25 minutes, until the egg and the biscuits have cooked.
