This recipe for an easy two-ingredient chia seed pudding is a go-to for meal prepping snacks!

I love chia seed pudding because it is a nutritious snack that can be prepared with just a minute of active prep time. The best part is that chia seed pudding has the taste and thick texture of the pudding that I ate for dessert when I was a kid, but it’s made with healthy ingredients! You just need two simple ingredients to make this chia seed pudding: almond milk and chia seeds.
You can use any type of almond milk. I chose to use O Organics® Vanilla Almond Milk and Open Nature® Chocolate Almond Milk. These plant-based milks are delicious, flavorful, high protein, budget-friendly alternatives to animal products.

The end result was several healthy plant-based snacks that I could store in my fridge and eat throughout the week. If you plan to meal prep chia seed pudding I definitely recommend putting individual servings in containers with lids – I am a big fan of grab and go snacks!
How to make Chia Seed Pudding:
Two Ingredient Chia Seed Pudding
This simple and delicious chia seed pudding is made with just two ingredients: chia seeds and almond milk. Then you can add your favorite toppings - berries, nut butter, coconut flakes, chocolate chips, and honey are all fine options! This is a plant-based protein-packed healthy alternative to other pudding recipes.
Ingredients
- 1/2 cup Vanilla or Chocolate Almond Milk
- 2 tablespoons Chia Seeds
- Toppings of your choice
Instructions
- Pour the almond milk into a container with a lid. Then stir in the chia seeds. Mix thoroughly.
- Place the lid on the container and refrigerate the pudding for at least 6 hours- or overnight.
- Add toppings just before serving!
Notes
You can use any type of almond milk. I like to use unsweetened vanilla or chocolate almond milk.
