I love cooking breakfast on the weekends, but I have a tendency to make a massive mess in the process. By the time I have made eggs, bacon, and hashbrowns there are pans everywhere. Breakfast pizza is a quick, easy, and low mess breakfast recipe!

The best thing about this meal is that you can prepare it in less than 20 minutes! I like to use naan as the base for my breakfast pizza. Naan is just the right size, it crisps up nicely, and I keep it in my freezer so that I can make this breakfast anytime. The best naan is Trader Joe’s frozen garlic naan. That is the thing I stock up on whenever I make a rare trip to Trader Joe’s.

To make this breakfast, you just top frozen naan with pesto, tomatoes, and mozzarella. Crack a couple eggs on top. Important note: you do want the naan to be frozen, otherwise it would overcook.

You can use any of your favorite pizza toppings or vegetables to make this meal. I used leftover ingredients that I found in my fridge. You may want to try adding prosciutto, marinara sauce, tomatoes, or bell peppers to your breakfast pizza.

I made just one pizza because I was home alone, but each pizza takes less than 5 minutes to assemble so you can easily make individual pizzas for the entire family.

Ingredients

  • 1 piece of Frozen Naan
  • about 2 tablespoons of Pesto
  • 1/4 cup chopped Tomatoes
  • 1/4 cup Mozzarella
  • 2 Eggs
  • Salt and Pepper

Instructions

Heat your oven to 400 degrees.

Place the frozen naan on a baking sheet and spread and even layer of pesto over the top. Then sprinkle chopped tomatoes and mozzarella over.

Crack an egg or two into the center of the breakfast pizza. Top with some salt and pepper.

Bake the breakfast pizza in the oven for 13-15 minutes, until the egg white has set, but while the yolk is still runny. Serve right away.
