Blueberry Goat Cheese Basil Pie Recipe 4

Blueberry Goat Cheese and Basil Pie combines the bright berry flavor of blueberries with the creaminess and tang of goat cheese and the fresh herbaceousness of basil. It’s anything but ordinary.

When I was finalizing a menu for a dinner party I was throwing when I was back home in Kennebunkport, my sister informed me that she needed me to make this pie.

Blueberry Pie

Luckily, this pie is very easy to make! I used a storebought pie crust, which saved me a significant amount of time and mess. We didn’t have a pie pan at my sister’s place, so I used a shallow bowl/plate instead. Once the pie crust was in place, I just needed to mix up the blueberry and goat cheese filling. The final touch was a brown sugar and walnut topping. The active preparation time was just 10 minutes, then the pie baked for 30 minutes.

You can taste the blueberries, goat cheese, and basil with each bit of the pie. The brown sugar and walnut topping is a crunchy treat.

As my mother served up slices of the pie at the end of the night, she was referring to it as “Kelly’s Blueberry Pie”. I quickly informed my mother that Kelly didn’t make the pie, she just provided me with a recipe that I loosely followed. “I consulted!” Kelly insisted. The debate is ongoing.

While I used fresh blueberries for my pie, you can use frozen blueberries instead. Just let them thaw first. I am also confident that you could use cream cheese instead of goat cheese.

This blueberry pie is anything but ordinary, it's made with goat cheese and basil and topped with a walnut crumble. It's bursting with fresh flavors, and it's easy to prepare.

Ingredients

  • 1 Pie Crust (store-bought is perfect)
  • 4 cups Blueberries
  • 1/2 cup Goat Cheese, at room temperature
  • 1/2 cup Heavy Cream
  • 1/2 cup plus 1/4 cup Brown Sugar, divided
  • 1/4 cup All-Purpose Flour
  • 1 large Egg
  • 1 1/2 tablespoons Chopped Fresh Basil
  • a pinch of Salt
  • 4 tablespoons Butter, at room temperature
  • 3/4 cup Chopped Walnuts
  • 1/4 cup Granulated Sugar

Instructions

Place the pie crust in a butter pie pan, or similar.

Rinse the blueberries and remove any remaining stems.

In a large bowl, whisk the goat cheese, cream, 1/2 cup brown sugar, flour, egg, basil, and salt together.

Add the blueberries to the goat cheese mixture. If you want to crush some of them, go ahead, otherwise, you can leave them whole.

Pour the mixture into the pie crust.

In a small bowl, mix the remaining brown sugar and the butter, walnuts, and granulated sugar together. Spread this mixture out on top of the pie.

Bake at 350 degrees for 30 minutes.
