If blueberry pie and cheesecake had a baby, it would be this Blueberry, Goat Cheese and Basil Pie. This is a memorable yet easy to make dessert to serve at a party.
Blueberry Goat Cheese and Basil Pie combines the bright berry flavor of blueberries with the creaminess and tang of goat cheese and the fresh herbaceousness of basil. It's anything but ordinary.
When I was finalizing a menu for a dinner party I was throwing when I was back home in Kennebunkport, my sister informed me that she needed me to make this pie.
Luckily, this pie is very easy to make! I used a storebought pie crust, which saved me a significant amount of time and mess. We didn't have a pie pan at my sister's place, so I used a shallow bowl/plate instead. Once the pie crust was in place, I just needed to mix up the blueberry and goat cheese filling. The final touch was a brown sugar and walnut topping. The active preparation time was just 10 minutes, then the pie baked for 30 minutes.
You can taste the blueberries, goat cheese, and basil with each bit of the pie. The brown sugar and walnut topping is a crunchy treat.
As my mother served up slices of the pie at the end of the night, she was referring to it as "Kelly's Blueberry Pie". I quickly informed my mother that Kelly didn't make the pie, she just provided me with a recipe that I loosely followed. "I consulted!" Kelly insisted. The debate is ongoing.
While I used fresh blueberries for my pie, you can use frozen blueberries instead. Just let them thaw first. I am also confident that you could use cream cheese instead of goat cheese.
