Chicagoans are a bit more creative with their pizza toppings and barbecue chicken pizza is common here. It might sound a little weird at first, but it has become one of my favorites. It is a great use for leftover Crockpot BBQ Chicken. The barbecue sauce becomes the sauce for the pizza, and then you add the toppings. It is a fun twist on a classic.
You will need:
Pizza Dough
1/2 cup Crockpot BBQ Chicken
1/2 Fresh Mozzarella
4 ounces sliced Mushrooms
*Caramelized Onions are a great addition too!
Step 1:
Butter a 10 x 15 inch pan (or a pan of a similar size), and stretch out the dough on the pan. Preheat the oven to 450 degrees. I like to use butter to grease the pan because I think it makes the crust a bit crisper.
Step 2:
Spread the BBQ chicken on the pizza crust. Then add the mushrooms and mozzarella
Step 3:
Bake for about 25 minutes, until the cheese is bubbling and the dough has browned.
