This cake is a family favorite. Growing up my Mom would let us pick out our birthday cakes. The options were unlimited, we could choose a cake from a bakery, or my Mom would make us whatever our hearts desired. Usually we asked for this cake. The recipe is an old recipe that my Mom has. The cake and frosting are light and airy. It is the type of dessert that you can eat even after a big meal. My Mom said that once she made the cake for a dinner party with another couple, and that the four of them ended up eating the entire thing.
The thing that makes this cake special is the frosting. The whipped chocolate frosting is light as a cloud. It is creamy and chocolaty without being overly sweet. The cake is just a basic angel food cake. You can make it from a mix or just pick up a pre-made cake at your grocery store. The frosting comes together very easily.
The other thing that makes this cake special is that there is frosting in the middle! Cake is just a vehicle for frosting, right?!
This cake is my brother’s favorite. You might not expect a big burly Maine man to enjoy baking, but my brother bakes often, and adorably he sends me photos of his creations. Over the summer he baked this cake for his friend Abby’s baby shower. I love the fact that he wanted to do something nice for the party, so he baked this cake. And as an added twist he added some raspberries to the center.
Jeff usually requests this cake for his birthday. This is Jeff’s favorite cake, and Jeff loves sweets. Once, I made the mistake of sitting next to him at dinner that night – something I never do anymore.
He distracted me by saying he saw a wild turkey in our yard and then stole my cake off my plate. You have to guard your food around Jeff. Lesson learned. I always warn the people who sit next to him at family functions.
You could also use this recipe to make cupcakes. Just pour the batter into cupcake molds instead of an angel food cake pan, and frost with the whipped chocolate frosting.

This is a simple recipe my family has been making for decades. You can either make the angel food cake from a mix (you just add water), or purchase pre-made from a grocery store. A few notes on making angel food cake: you need to let it cool completely in the pan and you need to let it cool upside-down or on its side. My mother also told me not to use a silicone pan because the cake can’t cool property in a silicone pan. Once the cake is completely cooled, remove it from the pan. Then using a serrated knife, cut the top off of the cake, starting from about 1 inch down from the top of the cake. See the photos and this is make much more sense. Then use the knife to cut out some of the inside of the cake. Next, make the frosting. Combine the whipping cream, sugar, cocoa, salt, and vanilla. Beat with a mixer until stiff. Fill the scooped out section of the cake with frosting and raspberries. Place the top back on the cake. Frost the cake! Top with toasted almonds with you like. Just a question. I am taking this cake for my grandsons' birthday. I will have it in a cooler, but I was wondering whether the frosting would hold up traveling in a car for 2 1/2 hours. Sometimes, plain whipping cream doesn't hold up very long without having to be re-. whipped. Does the addition of powdered sugar a d cocoa make it more stable?

Spouse's favorite birthday cake is angel food ā and this was a bit hit! I would only suggest that you format the recipe so that the "print" version fits on one page. I had to copy and paste an edited version into another document so that I could save it in my recipe binder (with link back to this website, of course!).
