Avocado Toast is one of those delightfully simple yet satisfying foods. It is also one of those foods that bloggers LOVE. You see it on blogs all the time; at its most simple it is a slice of toasted bread, drizzled with olive oil, topped with half of a mashed avocado and dusted with salt and pepper – red pepper flakes are also commonly used. The thing about avocado toast is that you can take that basic preparation and add to it. The possibilities are endless – and it makes for the perfect Sunday breakfast.
Yesterday I made two different variations of avocado toast – one fancy and one rustic.
Let’s start by talking about the fancy avocado toast (on the right). It had prosciutto, a poached egg, and crumbed herbed goat cheese on top of the traditional avocado toast base.
For each serving you will need:
1 slice of Bread
1/2 of a ripe Avocado
a slice of Lemon
about 1/4 teaspoon of Olive Oil
Salt and Pepper
Crushed Red Pepper
1 or 2 slices of Prosciutto
1 Egg
1 tablespoon White Vinegar
1 tablespoon Crumbled Goat Cheese
Step 1:
Use a small skillet to bring 2 inches of water and the vinegar to a boil. Then crack an egg into a small bowl – make sure the yolk does not break. Once the water has boiled, gently lower the egg into the water. If the egg white spreads out too much you can pull it back together with a spoon.After 2 minutes carefully make sure that the egg is not stuck to the bottom of the pan and roll the egg over. Cook for 3-4 minutes total depending on how runny you like your eggs. Click on the video tab at the top of this page to view a video demonstration.
Step 2: While the egg cooks, toast the bread.
Step 3: In a small bowl, mash the avocado and lemon together.
Step 4: Drizzle olive oil over the toast. Then add a thick layer of the mashed avocado. Sprinkle salt, pepper, and crushed red pepper over. Then add the crumbled goat cheese and the prosciutto. Finally, use a slotted spoon to remove the egg from the water, and place it on top of the toast.
The rustic avocado toast had fresh tomatoes and a fried egg. This version is slightly easier to make since most people find frying an egg to be easier than poaching an egg.
For each serving you will need:
1 slice of Bread
1/2 of a ripe Avocado
a slice of Lemon
about 1/4 teaspoon of Olive Oil
Salt and Pepper
Crushed Red Pepper
2-3 thin slices of fresh Tomato
1 Egg
Step 1: In a small bowl mash the lemon and avocado together.
Step 2: Toast the bread. Then drizzle olive oil over the toast. Then add a thick layer of the mashed avocado. Sprinkle salt, pepper, and crushed red pepper over. Place the tomatoes on top.
Step 3: Then fry your egg. Heat a small skillet over medium heat and crack an egg into the pan. Let cook for about 2 minutes, then flip and cook for about 30 seconds. Place on top of the avocado toast and eat!
