How to Make Cookies with what is in your Pantry

One day I was searching through my cupboard of baking ingredients, and inspiration struck. I had all sorts of chocolate chips, butterscotch chips, white chocolate chips, nuts, and other ingredients. What if I mixed up classic chocolate chip cookies, but instead of just adding the chocolate chips, I got a bit more creative. This is how Crazy Cookies were born. Let me tell you how to make cookies with what is in your pantry!

The rules are simple. There are no rules. Empty our your cupboards and assemble chips, nuts, cereal, peanut butter, nutella, pretzels, and anything that would taste good when mixed into a cookie.

I took my classic cookie mix and divided it into four bowls so that I could create four distinctly different cookies. First I made peanut butter, marshmallow, rice krispie, and chocolate chip cookies. Next, I created nutella white chocolate cookies. Then butterscotch, chocolate chip, and walnut cookies. The last creation was my favorite: peanut butter, pretzel, and chocolate chip cookies.

Making crazy cookies would be a fun activity to keep kids occupied on a snow day. Since I grew up in Maine, I experienced a lot of snow days, and remember spending some of them baking.

I love the concept of crazy cookies because you can add all of your favorite ingredients. I shared the cookies with my friends and we all had a different favorite. I really liked the flavor and texture that chunky peanut butter added to the cookies. Pretzels were a last minute addition and since I am a big fan of the sweet and salty flavor contrast, this was my favorite. I just broke up small pretzel sticks and added them in! The marshmallows completely melted to the point that they weren’t really noticeable, but they gave the cookies a gooey texture.

Ingredients

  • 2 1/4 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 stick of Butter (at room temperature)
  • 3/4 cup Granulated Sugar
  • 3/4 cup Brown Sugar
  • 1 teaspoon Vanilla
  • 2 Large Eggs
  • 1 cup Mini Chocolate Chips
  • 1/4 cup Butterscotch Chips
  • 1/4 cup White Chocolate Chips
  • 1/2 cup Peanut Butter
  • 1/4 cup Rice Krispies
  • 1/4 cup Nutella
  • 1/2 cup crushed Pretzels
  • 1/4 cup Mini Marshmallows
  • 1/4 cup Walnuts

Instructions

  1. Start by heating your oven to 375 degrees.
  2. Then mix the flour, baking soda, and salt together in a bowl and set aside.
  3. Use an electric mixer to beat the butter, sugars, and vanilla together. Once this mixture is creamy and smooth, add the eggs once at a time.
  4. Slowly add the flour to the mixer, stopping to scrape down the sides of the bowl if necessary.
  5. Then divide the dough into 4 smaller bowls. Mix 1/4 cup chocolate chips, 1/4 cup peanut butter, the rice krispies, and marshmallows into the dough in one bowl.
  6. In another bowl stir together the nutella, white chocolate chips, and dough.
  7. Next, combine the butterscotch chips, walnuts, 1/4 cup chocolate chips, and dough.
  8. Finally, add the remaining chocolate chips, 1/4 cup peanut butter, and pretzels to the last bowl of dough and mix.
  9. Use a large spoon to scoop up about 2 tablespoons worth of dough, roll it into a ball, and place it on an ungreased baking sheet. Space out the balls of dough leaving about 4 inches of dough between each one.
  10. Bake the cookies for 9-11 minutes in batches using up all of the dough.
